About the role
Key responsibilities & impact- Prepare, produce, cook, and present breakfast, lunch, dinner, bakery, pastry, coffee, beverage, salad, sandwich, meat, cheese, and vegetable items
- Complete pastry preparation, including mixing, baking, and frying
- Assist supervisors with menu and recipe development
- Monitor and replenish kitchen production items using proper rotation procedures
- Review daily needs, complete production sheets, review maintenance reports, and verify supply availability
- Prepare, place, present, and restock food items in serving areas
- Use production sheets to determine quantities needed
- Operate food preparation equipment and cutting instruments
- Assist personnel with food production and special duties; serve on the service line as needed
- Clean and sanitize preparation areas, salad bars, workstations, equipment, storage areas, and other surfaces
- Verify and oversee serving lines, bars, and related areas are stocked, set up, and clean
- Remove garbage and set up or break down tables, snack bars, display cases, and serving lines
- Communicate with supervisors about meal items and backups
- Complete menu display announcements
- Handle or organize freight
- Supervise assigned staff directly or through lead personnel
- Maintain quantity and quality control and overall sanitation
- Assist with supervision and training of food service personnel
- Instruct others on proper produce and dairy rotation procedures
- Maintain food production equipment and storage areas according to sanitation, safety, and operational procedures
- Notify supervisors when safety and sanitation standards are not met
- Perform other duties supporting the department or unit’s success
Requirements
What you’ll need- High School Diploma or GED equivalent
- At least three (3) years of directly related restaurant cooking and/or baking experience
- Working knowledge of high-volume food and bakery production, food service production, food service positions, equipment, and supervisory techniques
- Must have an Alaska Food Workers Card and/or ServSafe Certification or obtain upon hire
- Must pass pre-employment requirements, which may include drug test, physical and fit for duty assessment, and hearing test
- Ability to instruct and train others and handle multiple tasks simultaneously
- Ability to cooperate and work as part of a team
- Ability to make decisions with little to no supervision
- Ability to stand for 12 hours per shift for the scheduled rotation
- Ability to live in dormitory-style settings and meet remote camp cleanliness requirements
- Must adhere to company and client safety guidelines and regulations
- Must speak, understand, read, and write English
- Must be able to travel by plane and/or bus to remote camps
- Preferred: Associate’s Degree in Culinary Arts or recognized formal certified training program from a National Association
- Candidates without preferred vocational training need an additional two (2) years’ experience in this field
- Preferred: At least two (2) years’ experience in a supervisory role in a restaurant and/or industrial kitchen setting
- Physical ability to complete specified lifting, carrying, pushing, stooping, squatting, kneeling, stair-climbing, and fit-for-duty tests
- Candidates residing outside the Anchorage area may be responsible for travel expenses and accommodations related to pre-employment tasks in Anchorage, Alaska
